1.  Anthocyanins (E163)

  • Colors: Red, Purple, Blue
  • Source: Black Grapes, Blackcurrants, Cherries, Elderberries, Red Cabbage, Strawberries
  • Key Features: Water-soluble pigments sensitive to pH changes; used in drinks, jams, and confectionery.

2.  Betanin (E162)

  • Colors: Red, Pink
  • Source: Beetroot
  • Key Features: It is water-soluble but sensitive to light, heat, and oxygen.  It is ideal for frozen, dried, and short-shelf-life products like yogurt and ice cream.

3. Carminic Acid (E120)

  • Color: Red
  • Source: Cochineal insect。
  • Key Features: Stable to heat, light, and oxygen; used in alcoholic beverages and processed meat.

4.  Chlorophylls/Chlorophyllins (E140/141)

  • Color: Green
  • Source: Spinach, Parsley, Nettles, Alfalfa Grass
  • Key Features: Chlorophyll is oil-soluble, while chlorophyllins are water-soluble and heat/light-stable. They are used in confectionery and dairy products.

5.  Carotenoids (E160a–g)

  • Colors: Yellow, Orange, Red
  • Source: Annatto, Carrots, Tomatoes, Saffron, Oranges, Palm Fruit
  • Key Features: Oil-soluble, heat-stable, unaffected by pH changes; used in margarine, dairy, and beverages.

6.  Curcumin (E100)

  • Color: Lemon Yellow
  • Source: Turmeric
  • Key Features: Oil-soluble, heat-stable, but light-sensitive; used in pickles, soups, and confectionery.

7.  Riboflavin (E101)

  • Color: Yellow
  • Source: Eggs, Milk, Yeast
  • Key Features: Water-soluble and heat-stable; used for fortification and coloring in dairy, cereals, and desserts.

8.  Carbon Black (E153)

  • Color: Black
  • Source: Carbonized vegetable material
  • Key Features: Heat- and light-insoluble pigment; used primarily in confectionery.

9.  Caramels

  • Color: Brown
  • Source: Melanoidins (Caramel)
  • Key Features: Water-soluble, heat- and light-stable; used in baked goods and soft drinks.
